When scanning a check-in record (Contact QR code), how or what is put as a value in the campaign field (vfs__Campaign_to_Check_Into__c)?
The Contact Scan uses the QR Code on the Contact record. The campaign field can be set up by configuration in the V4S app configurator.

The current version of the V4S Kiosk app only supports QR Code scan for Contacts.

Yes, it can be edited in-line, if the User has Permission to the Contact Check-in object and its fields.
